Quinoa Steak Salad:


Cook time: 10 Minutes; Serves 4

  • Roasted corn (one can)

  • Edamame (one package)

  • Tomatoes (pico style- half of a small container)

  • Onions (half of a small container)

  • Peppers (half of a small container)

  • Kale (pre-packaged pack)

  • Soy sauce (4-5 tablespoons)

  • Black beans (one can)

  • Rice/Quinoa mix - precooked in bag (one bag)

  • Quinoa - precooked in a bag (one bag)

  • Steak tips or chicken strips (one package)

  • Garlic Salt (table spoon)

Heat a large pan on the stove on low/medium heat. Spray with olive oil and start cooking steak tips on medium heat. Heat a large pot to a super low heat and start adding all the ingredients except for the kale in no specific order. By then the steak should be pretty much done. Add the steak into the pot and add any more soy sauce/garlic salt to flavor as needed. Lay a bed of kale out on the plate then scoop the ingredients on top. Super easy. Enjoy!


Breakfast Casserole


Cook time: 70-80 minutes; Serves 2-3

  • Turkey bacon (One pack or less)

  • Chicken sausage (2 links)

  • Egg whites (one 16oz carton - the small one)

  • Tri-colored peppers (fresh red, yellow, green - one of each)

  • Shredded cheese (1/2 package)

  • Avocados (one)

  • Seasoning -Everything but the Bagel (found at Trader Joe’s)

-Preheat oven to 375 degrees

-Bake covered in Aluminum foil for 75-90 minutes
